The all new Stix Éclair Super Team
Our Executive Pastry Chef, Florent Rethouze, attended a Masterclass with the esteemed 3 Michelin Star chef, Joakim Prat, who is the owner of “Maitre Choux” in London. The designer patisserie is located in Kensington and is globally recognised for his absolutely stunning eclairs. The shop has become so successful that Joakim is also looking to branch out into Dubai and New York.
The masterclass was an amazing learning experience that spanned over 3 days and covering over 19 different flavours including hazelnut & milk chocolate, Persian pistachio, red love raspberry and Tahitian vanilla and pecan.
Following the Masterclass, Flo led his own demonstration for his Pastry team to provide them with the skills he picked up and to conduct his very own “Éclair-off.” Each pastry chef was given the task of using their new found skills to design and decorate their own selection of eclairs…the results were unbelievable.
