Hunting for Truffles!
Executive Chef, Andy Ball, ventured down to the Southern Highlands for the first Truffle Hunt of the season with Tarago truffles. Owned and managed by Denzil and Anne Sturgiss, the truffiere is famous for its “Black Winter Truffles.” This type of truffle favours the winter as the cold climate is necessary to fully mature them, ready for harvesting. Denzil & Anne’s truffle dogs, Dusty, Joker, Solly and Pepper accompanied them to detect the level of aroma that tells the team when the truffle is ready and matured.
Feeling inspired from this amazing experience, Andy and our events team are currently focusing on developing some Truffle inspired dishes which we hope to feature on our menus soon. Furthermore, our team at the farm is looking into growing our own Truffles to be able to supply to our kitchens and our clients.
