Masterclass with Gael Etrillard
Our pastry team welcomed esteemed Pastry Chef Gael Etrillard to conduct a masterclass with us on Friday 24th August 2018.
Chef Etrillard is the Area Pastry Chef at les vergers Boiron which is the premier producer of frozen fruit and vegetable purees and coulis globally. Prior to this, he was also the Executive Pastry Chef at Raffles Hotel Singapore, having worked in Asia for more than 13 years. Now he is based in Singapore but travels weekly to showcase his signature recipes.
Working closely with our pastry chef Nicole Yang, he took the team through his recipes to make:

DARK CHOCOLATE AND RASPBERRY SLICE
It was a wonderful learning opportunity for our chefs who left feeling inspired with an understanding of Gael’s refined techniques and bold fruity flavours.
