Showcasing De Palma Salumi

De Palma Salumi is one of Australia’s premier salted and cured meat producers.  This boutique business is one of only a few producers in Australia, using traditional slow fermenting methods to make Salumi, Prosciutto, Pancetta, Guanciale and various other small goods.  


Most commercial producers rely on synthetic ingredients to speed up the fermenting process. 


De Palma uses the finest quality produce and lets natural bacteria do all the work. The majority of their products are aged about 6 months to a year! 


This ageing process creates an extremely complex and balanced flavour profile.  We can’t wait to showcase more of De Palmas produce and employ some these techniques ourselves at Stix!
