What The Fungus!?!
For the last year we have been implementing a plan to cultivate exotic mushrooms at Stix Marrickville. Our idea was to utilise waste products such as coffee grinds from our cafes at Macquarie and local hardwoods that are grown around our farm at the Hawkesbury and use this as our mushroom growth material, known as a substrate.
Before we began to construct the grow room at our Marrickville site, I did a week long research trip to Canada to work at a mushroom farm called What the Fungus. WTF is known for its amazing king oyster, chestnut, lions mane, and oyster mushrooms and produces around 100kg per week.
Over my stay I was able to experience the entire process from start to finish and since getting back, we have finished building our grow room and have already had our first harvest!
The goal now is to begin the process of eventually supplying all our sites with mushrooms picked the very day you receive them. This is the real meaning of farm to table and is another super exciting project that will add to our already amazing array of fresh produce.
